Fancy Mac and Cheese
1lb elbow pasta or equivalent corkscrew, cup, etc. 3 tbsp all-purpose flour 4 tbsp butter 2 1/2 cups milk 2 1/2 cups shredded cheese (I like to use swiss and cheddar) salt black pepper 2 bay leaves 1/2 cup of cheese for topping. I like to use parmigiano-reggiano but you may prefer something cheaper. (optional) bread crumbs
Preheat your oven to 400F.
Cook your pasta. Always make sure to salt the water well. Keep a close eye on it, and take it out and strain it when it still has a minute or two before it would be done- this is important. Rinse the pasta in cold water to keep it from softening any further.
While you're cooking the pasta, take the milk and put it in a small saucepan with the bay leaves. Heat on medium until the milk starts to show bubbles around the edges. Take it off the heat and let it sit. Take out the bay leaves before using the milk.
Melt the butter on medium heat. When it starts to foam add the flour and stir. Cook this mixture until it starts to brown, then add a quarter cup of milk. Whisk it smooth, then add another quarter and repeat until all the milk is gone. At first it will seem too thick, then too thin, but it will work out in the end. Once all the milk is gone, add the cheese handful by handful, whisking it in until it's all melted into the mixture.
Pour the sauce over the pasta, mix it up really well.
Grease a 9"x13" baking pan or a deep pan if you prefer them to long ones (or whatever you Rhomos have in your kitchens) with butter. Pour the pasta into this, then sprinkle with salt, pepper, bread crumbs, and your topping cheese. Bake for about 15 to 25 minutes or preferred level of crisp and bubbly goodness. This will feed one fat goon for two meals.
Eat it with a salad and you won't feel as guilty.
4 to 6 boxes or small bags of chopped frozen spinach 1/2 pound of misc. shredded cheese. I recommend some cheddar, swiss and mozzarella. This works out to be around four and a half cups. 1 can of artichokes and/or water chestnuts (Optional) 12 ounces of small curd cottage cheese A pinch of red pepper flakes Black pepper and Salt according to your taste. A pinch of cinnamon
Thaw the spinach and then press it dry in a colander or using whatever method you're comfortable with. Mix the spinach in a large mixing bowl with all of the ingredients. Mix it well using your hands to make sure that everything is thoroughly blended together, then spread the mixture inside a rectangular/square pyrex baking tray or the equivalent. Bake at 375 for 30-45 minutes until it achieves the desired level of browning on top. Let it stand for about five minutes before eating. It reheats very well.
