http://eve.grismar.net/ore/ allows you to input the local market prices of various minerals and return information about relative worth of the various ores. If you don't feel like going through that much work, this is a quick chart. Also see Security class for info on what ores are found where.

What Ore Spawns Where?

Not all space is created equal. Different regions of space have their own sort of special ores. For instance, Crokite does not spawn in the southeast, but it did spawn in syndicate. Better ores spawn in areas that have lower security, with the best ores spawning in -1.0 space, and only the worst ones spawning in 1.0 space. For a more indepth look at how system security affects which ores spawn, see security class. Most Maps worth their salt have a designation for each system, and a key that tells you what ores will spawn there.

Here's an image that shows what ores spawn in which highsec areas. Note that Spodumain, Gneiss, Dark Ochre, Crokite, Bistot, Arkonor and Meroxcit do not appear on this chart; they only spawn in 0.0 sytems with suffcient truesec.
